A hit of bing cherry, followed by black peppercorn, cloves, white sage and a lift of dried roses. There is a moody dance going on here with concentrated fruit on one hand, and a fresh, energetic burst on the other. Pair with pan seared filet with brown butter and fresh herbs, sauted chanterelle mushrooms, cacio e pepe, or braised tomatoes with burrata and smoked white beans.
