This selection also concentrates on finding vines that have a good resistance to diseases and are free from viruses
The agave is carefully trimmed of its pencas (or leaves) to avoid any bitterness
located in the hamlet of Verlieu (part of the town of Chavanay) was founded several generations ago (1920)
requiring an additional two to four years to fully reveal its true character

In 1984 Olivier Leflaive launched his own company Olivier Leflaive Frres with the help of his uncle Vincent and his brother Patrick. He quickly established his own reputation amongst Burgundys finest.
