All vineyards are steep sloped or terraced. The particular slate profile of Winningen is a grey brown that also contains iron and other mineralic particles that slowly oxidise red and yellow. All vineyards are facing south or south west. Four to eight hour maceration on skins, natural settling by gravity, spontaneous fermentation, no chaptalization, no fining, no additions or
