Hand picked. 1 4 whole cluster pressed. Fermented in stainless steel. Elevage in 5 10 year old French oak. No adjuncts or manipulation (acidification, de acidification, chaptilization etc.) Tasting Notes: Light, slightly hazy lemon hay in colour. Lemon peel, fresh clover and apple skin on the nose.
