Sakai sans focus with the Shinomine range is to craft balanced and acid driven sake that showcases the rice type along with the ability to age gracefully. The Shinomine Yamahai from Chiyo Shuzo is made with Omachi rice polished to 77% remaining. Yamahai is a traditional style of fermentation starter. This shows wonderful texture and complexity.
