The juice flows by gravity into underground tanks for a spontaneous native-yeast fermentation that lasts 2-3 months and stops naturally in the cold cellar
Overnight settling then occurs before transfer to a combination of new Stockinger 300l oak and Burgundian piece for fermentation and lees aging for 12 months
Both parcels were combined and aged for five months in neutral French barriques
