About half of the barrels are not topped off and the wine develops flor

Foot-trod whole bunches are fermented with native yeast for 5 days then pressed into stainless steel and bottled the following Spring

there is a balance of caramel and toasted oak

The peaches have gorgeous aromatics that translate beautifully to wine. We decided to take our peach wine to the next level and make a refreshing Peach and Chardonnay sparkler. We combined our home grown Fay Elberta peaches with our Linda Vista Chardonnay
