Pure, iodized chalk, streaked with colluvial limestone chalk formations. Viticulture: Organic (in conversion as of 2019), with biodynamic methods (since 2021). Vinification: Spontaneous alcoholic and malolactic fermentations with no added SO2, aged 10 months with 40% in 600 liter barrels and 60% in stainless steel tank. No fining, no filtration.
